Roasted Roma Tomatoes

These tomatoes are really good in a caprese salad.

Roma tomatoes, cut in half length-wise
Balsamic Vinegar
olive oil

Cut tomatoes in half length-wise. Use your finger to take out some of the excess liquid. Place the tomatoes face up on a baking sheet, drizzle them with balsamic vinegar and olive oil. Place them in the oven at 275 degrees for 2 hours.

You can sprinkle with fresh ground pepper, chopped garlic, fresh herbs such as thyme.

Some people take out all the seeds and juice, but I like to leave some of it in.
