Oatmeal Butterscotch Cookies
3/4 c butter 1/4 c sugar 1/2 c brown sugar 1 egg 1 tsp Vanilla extract 2 c oats 1 c flour 1 tsp baking soda Dash of salt 6 oz butterscotch morsels
Preheat oven to 350 degrees. Whip together butter and sugar. Whip in the egg and the vanilla.
Mix together flour, baking soda, oats, and salt. Add to mixture. Add morsels.
Spoon out tablespoon sized scoops 1 inch apart onto greased cookie sheet. Bake 8-10 minutes.
Notes: If the butter is cold, it can be softened by a few seconds in the microwave. As a slight enhancement for richer flavor, take an extra tablespoon of butter and a spoon full of butterscotch chips and melt them together to make a liquid. While lukewarm, whip this mixture into to the butter/sugar mixture. If you like white chocolate chips, add a few ounces of white chocolate chips to the mix.
