Quiche

Simple method for making quiche with premade pie crust.

4 large eggs
1 & 1/4 cup heavy cream
1 tsp salt
pepper
1 to 1.5 cups of grated cheese (cheddar is an easy choice).

Prebake pie crust:

Roll out a pie crust so it is slightly larger than the pie pan. Oil the pan and tuck in the pie crust. It will shrink slightly when baking. If it tears when baking you can patch it up. You can also pre-bake it the day before you use it, by wrapping it and storing it at room temperature.

Prepare ingredients for the Quiche:

Assemble Quiche:

  1. Place ingredients around the bottom of the crust.
  2. Sprinkle cheese over the ingredients.
  3. Slowly pour in the egg/cream mixture.
  4. Bake at 325 for 50 minutes.

Remove from oven and let cool for at least 30 minutes.

Example ingredients:

Dice 3 Slices of bacon and render them in a frying pan. Remove the bacon and add 1/2 yellow onion chopped to the drippings. Saute until soft but not browned. Remove from pan and discard drippings. Saute sliced mushrooms in butter. If using broccoli, steam or par boil until partially cooked. Combine these on the bottom of the pre-cooked pie crust.
